What Is Pecan Brittle?

Pecan brittle is what happens when pecans get caught in a sheet of caramelized sugar and nobody tries to rescue them.

The candy is thin.

Crisp.

Buttery.

Nutty.

And hard enough to break with a snap.

Traditional pecan brittle is made by cooking a sugar syrup to the hard-crack stage, adding pecans, then quickly spreading or stretching the hot candy into a thin layer before it cools.

Butter, salt, vanilla, corn syrup, and baking soda are common additions.

Once cool, the sheet is broken into irregular pieces.

No two pieces look exactly alike.

That is part of the point.

Pecan Brittle Is Basically a Nut Brittle

Brittle is a family of candies rather than one specific nut recipe.

The basic idea can be made with:

Peanuts.

Pecans.

Almonds.

Cashews.

Walnuts.

Seeds.

Or combinations.

Peanut brittle became the best-known American version, but switching the peanut for pecan changes the candy considerably.

Pecans contain more of the rich, buttery flavor associated with the nut itself.

Louisiana’s relationship with pecans goes well beyond candy.

The LSU AgCenter identifies Louisiana as an important starting point in the development of the commercial American pecan industry.

Records show pecans being sold through the Port of New Orleans during the 1700s.

Then, in the 1840s, an enslaved gardener named Antoine successfully grafted pecan trees at Oak Alley Plantation in St. James Parish, eventually producing what became an early grafted pecan orchard.

That work helped demonstrate that desirable pecan trees could be reproduced reliably.

So when Louisiana candy makers put pecans into brittle, they are not adding a random Southern ingredient.

The nut already has centuries of history here.

What Goes Into Pecan Brittle?

A familiar recipe may contain:

Sugar.

Corn syrup.

Water.

Pecans.

Butter.

Salt.

Vanilla.

Baking soda.

Not every formula uses every ingredient.

Some caramelize plain sugar.

Some contain considerably more butter.

Some omit baking soda and make a denser, glassier brittle.

But the classic American style combines nuts with a cooked sugar syrup that becomes hard and crisp after cooling.

The Sugar Has to Reach the Hard-Crack Stage

The higher its temperature rises, the less water remains.

At the hard-crack stage, roughly 300°F to 308°F at sea level, there is so little moisture left that the cooled sugar becomes hard and brittle rather than chewy.

That is exactly what the name promises.

Brittle should break.

If it bends like caramel, something went differently.

A Candy Thermometer Makes Life Easier

Experienced candy makers can judge sugar syrup using color and cold-water tests.

A thermometer removes much of the guessing.

For brittle, a few degrees can make a real difference.

Too cool and the finished candy may remain sticky or chewy.

Too hot and the sugar can scorch.

Pecans can burn too.

The useful window is narrow enough that a thermometer quickly earns its place in the kitchen.

Candy making rewards precision more than optimism.

Why Is Corn Syrup Often Added?

Granulated sugar naturally wants to form crystals.

That is useful when making certain candies.

It is not what brittle needs.

Brittle belongs to the noncrystalline candy family.

The goal is a smooth, glass-like sugar structure rather than something grainy.

Corn syrup contains sugars that interfere with ordinary sucrose molecules lining up neatly into crystals.

That helps the candy stay smooth while it cooks and cools.

It is the same general reason corn syrup appears in many old-fashioned candy recipes.

Not because sugar alone cannot make candy.

Because controlling sugar is half the job.

Why Does Baking Soda Go Into Brittle?

This ingredient can look strange the first time someone makes brittle.

Then it hits the hot sugar and the entire pot foams.

Baking soda reacts in the hot candy mixture and releases carbon dioxide gas.

Those tiny gas bubbles create a more porous structure.

Instead of cooling into one solid, glassy slab, the brittle becomes lighter and easier to bite.

That airy internal structure can make the difference between pleasant crunch and candy that feels like it was designed to test dental work.

Baking Soda Goes In Near the End

Timing matters.

The sugar mixture first reaches its target temperature.

Then the pan comes off the heat.

Butter, vanilla, and baking soda may be added according to the particular recipe.

Once the soda hits, the mixture can expand rapidly.

That is why a sufficiently large saucepan matters.

A pot that looked perfectly reasonable five seconds earlier can suddenly become ambitious.

The cook also has to move quickly.

Once the candy leaves the heat, cooling begins immediately.

The Pecans Can Go In Before the Final Temperature

Many brittle formulas add nuts before the syrup finishes cooking.

That lets the pecans heat and toast slightly in the sugar.

Other versions begin with toasted nuts and add them later.

Either way, the goal is similar:

Get roasted pecan flavor throughout the candy without burning the nuts.

Pecans contain a great deal of natural oil.

That gives them their rich flavor.

It also means they can scorch if held at extreme heat for too long.

Candy making is already a race against the thermometer.

The nuts have opinions too.

Toasted Pecans Make the Flavor Stronger

Lightly toasted pecans can make excellent brittle.

Heat develops their aroma and deepens their nutty character.

But if those nuts will then spend several minutes in sugar approaching 300°F, aggressive pre-toasting may be unnecessary.

A lightly toasted pecan has room to develop further.

A darkly toasted pecan may cross into bitter territory.

The goal is buttery and roasted.

Not charcoal surrounded by caramel.

Why Pecan Brittle Tastes Different from Peanut Brittle

The candy technique can be almost identical.

The nut changes everything.

Peanuts have a strong roasted, earthy flavor and a relatively firm crunch.

Pecans are richer.

More buttery.

More delicate.

Sometimes slightly sweet on their own.

Their higher oil content also creates a softer contrast with the hard candy surrounding them.

Peanut brittle tastes unmistakably like peanuts and caramelized sugar.

Pecan brittle can taste closer to the flavor family of:

Pralines.

Pecan pie.

Butter pecan.

And caramelized pecans.

Same candy architecture.

Different tenant.

Pecan Brittle Is Not a Praline

Louisiana already has another famous pecan-and-sugar candy.

The praline.

The two should not be confused.

A New Orleans praline is normally a crystalline candy.

Sugar, dairy, butter, and pecans are cooked and then beaten or stirred as the mixture cools.

Controlled crystallization creates the familiar creamy or slightly grainy texture.

Pecan brittle does the opposite.

It tries to prevent crystallization.

The candy is cooked hotter and allowed to cool into a hard, glassy structure.

Praline:

Creamy.

Tender.

Crystalline.

Brittle:

Thin.

Hard.

Crisp.

Noncrystalline.

Same pecan.

Completely different sugar behavior.

Pecan Brittle Is Not Toffee Either

These two candies are closer relatives.

Both are crisp.

Both can contain butter.

Both may include nuts.

But traditional toffee generally contains substantially more butter and is cooked as a butter-and-sugar candy.

Brittle more often begins with a sugar syrup and may use only a modest amount of butter.

Baking soda is also especially characteristic of American brittle because it creates that porous texture.

Toffee tends to be richer and denser.

Brittle tends to be lighter and more glass-like.

Of course, family and commercial recipes can blur the line.

Candy does not consult a dictionary before entering the saucepan.

Thin Brittle Is Easier to Eat

Once the candy is cooked, speed becomes important.

The hot mixture is poured onto a prepared surface.

Then it is spread or stretched.

Thin brittle has several advantages.

It snaps more cleanly.

It is easier to bite.

The ratio of pecan to candy improves.

And nobody needs specialized equipment to break off a piece.

New Orleans’ Leah’s Pralines says it has made pecan brittle since 1944, cooking it in copper kettles, pouring it onto marble, and stretching it by hand to make the candy thin and crisp.

That hand-stretching step is old-fashioned candy making with a practical purpose.

Thin tastes better because thin eats better.

The Candy Has to Be Spread Quickly

Hot brittle behaves politely for only a short period.

Fresh from the saucepan, it flows.

Then the temperature drops.

Viscosity increases.

Soon the candy stops cooperating altogether.

That means the pan or surface should be ready before cooking begins.

So should the spatula.

So should everything else.

Brittle is not a recipe where you reach 300°F and then start looking for the baking sheet.

At that point, the sugar is in charge of the schedule.

Butter Adds More Than Richness

Butter contributes flavor.

But it also changes the way the candy feels in the mouth.

A small amount can make brittle seem less starkly hard.

The dairy solids also contribute to browned flavors.

Combine butter with caramelized sugar, vanilla, salt, and pecans and you begin moving toward that familiar Southern butter-pecan flavor.

The brittle still snaps.

It just does so with considerably more personality.

Salt Matters

Sugar candy needs salt more than its ingredient list might suggest.

Without enough salt, pecan brittle can taste one-dimensional.

The sweetness dominates everything.

A little salt sharpens the pecans and balances the caramelized sugar.

Some modern versions go farther and sprinkle flaky salt on top while the candy is still warm.

That creates little bursts of salt against the sweet brittle.

Pecan plus caramel plus salt is not exactly an experimental flavor combination.

It has survived the testing phase.

Vanilla Is Common but Optional

Vanilla gives brittle a familiar candy-shop aroma.

It works particularly well with pecans and butter.

Because vanilla extract contains liquid and alcohol, it is generally added after the candy leaves the heat.

The mixture may sputter.

So may the cook if the steam finds a hand.

The finished candy only needs enough vanilla to round out the caramel and pecan flavors.

It should still taste like brittle.

Not vanilla extract with structural support.

Hot Sugar Is Extremely Hot

This sounds obvious until someone treats it like ordinary boiling water.

Hard-crack sugar syrup is around 300°F.

It also sticks.

That makes sugar burns particularly dangerous.

Do not touch freshly poured brittle.

Do not taste the syrup from the spoon.

Do not decide that moving one little piece by hand will probably be fine.

It will not be fine.

Let the candy cool completely before breaking it apart.

Some culinary lessons are best learned from instructions rather than experience.

Humidity Can Make Brittle Sticky

Sugar attracts moisture from the air.

That means brittle and Louisiana humidity are not ideal roommates.

Leave brittle exposed long enough on a humid day and the surface can become sticky.

The crisp texture can soften.

Colorado State Extension notes that properly made noncrystalline candies such as brittle depend on careful control of sugar concentration and storage.

Once cool, brittle should therefore go into an airtight container.

Not tomorrow.

Not after everyone admires it for six hours.

Once cool.

Louisiana air is patient.

It will eventually find the sugar.

Do Not Refrigerate It Just to Fight Humidity

The refrigerator seems like an obvious solution.

It can create another problem.

Condensation.

Cold candy brought into warm, humid air can collect moisture on the surface.

That moisture can make brittle sticky.

For most homemade brittle, an airtight container at a cool room temperature is preferable.

Keep it dry.

That is the important part.

The candy has already given up nearly all its water during cooking.

There is no reason to invite any back.

Pecan Brittle Became Natural Holiday Candy

Like divinity, brittle fits comfortably into Christmas candy making.

Pecans are harvested in fall.

The candy stores well when kept dry.

It can be made in batches.

It travels reasonably well, assuming nobody expects every piece to remain the same shape.

And broken brittle looks perfectly appropriate in:

Tins.

Candy boxes.

Gift bags.

Dessert trays.

No slicing.

No refrigeration.

No fork.

Take a piece and keep moving.

Holiday food appreciates efficiency.

Broken Pieces Are Not a Defect

This deserves saying about a candy called brittle.

It is supposed to break.

Large decorative sheets look impressive.

Eventually someone has to crack them apart.

Commercial candy makers even warn that brittle can break during transportation because fragility is inherent to the product.

That is not damaged candy.

That is candy fulfilling its job description.

The little pieces at the bottom of the container are still useful too.

Sprinkle them over:

Ice cream.

Cake.

Pudding.

Brownies.

Cheesecake.

Or anything that benefits from pecan caramel crunch.

There should be no brittle casualties.

Louisiana Did Not Need to Invent Brittle

There is no good evidence that pecan brittle originated in Louisiana.

Nut brittles belong to a much broader American candy tradition.

Peanut brittle is made throughout the country.

Other cultures have their own traditions of nuts or seeds set into hardened sugar.

Louisiana’s connection comes from something much more defensible:

the pecan itself.

Louisiana played an important role in the development of commercial pecan growing.

Pecans became part of the state’s candy traditions.

And New Orleans candy shops have made pecan brittle for generations.

That is a real Louisiana story.

It does not need embellishment.

A Harder Cousin to the Praline

Perhaps the easiest Louisiana way to understand pecan brittle is to put it beside a praline.

Both begin with pecans and sugar.

Then technique sends them in opposite directions.

The praline encourages crystallization and stays tender.

The brittle prevents crystallization and goes all the way to hard crack.

One gets spooned into creamy patties.

The other gets poured into a sheet and broken apart.

One melts and crumbles.

The other snaps.

Same Louisiana pecan.

Two completely different lessons in sugar.

And that may be what makes pecan brittle interesting.

It takes an ingredient Louisiana already knows extremely well and changes everything around it.

Sugar cooked almost to its limit.

Butter.

Salt.

Vanilla.

A little baking soda.

Plenty of pecans.

Spread it thin.

Wait until cool.

Then break it.

For once, smashing dessert into pieces is not only acceptable.

It means you made it correctly.
